Foeder-aged Farmhouse Ale with Brettanomyces-
This is our classic farmhouse ale Seizoen Bretta recipe, but fermented and aged in our Hungarian oak foeder, lending subtle tannic, spicy, and vanilla aspects of complexity which complement the funky, citrusy dryness that our house Brettanomyces strain creates with extended aging. The complexity and intensity of our house Brettanomyces is brought to its fullest potential with this offering, which was bottled in June of 2016 and has since continued to age and develop in our personal cellar. This beer is bottle conditioned, contains Brettanomyces, is unfiltered and unpasteurized, and has been aging in the bottle for six years(!) As with all of our bottle-conditioned offerings, we recommend refrigerating for at least 24 hours before opening. Recent bottles that we have opened of this have been perfectly carbonated, so there is no need to be particularly worried with this one due to its age, but as always, wild yeast is sometimes unpredicatable. Brettanomyces strains are basically the cats of the beer fermentation world. 8% ABV
