Oak-aged spontaneously fermented beer with cherries-
A years-long collaboration with our good friend (and former Logsdon brewer) Charlie Van Meter. It began as a traditional Belgian-inspired recipe that we brewed and inoculated overnight in the koelschip of our Hood River farm and was fermented and aged in French oak barrels. After a year and a half of aging, the barrels were blended onto 200 pounds of whole Jubileum tart cherries, where it refermented on the fruit for an additional year. The result is a fruit-forward tart beer full of sweet and mildly spicy cherry flavors and aromas with well-developed earthy and funky Brettanomyces character. This beer is bottle-conditioned, unfiltered, and unpasteurized, and can be aged gracefully for years. Chilling for at least 24 hours before opening is recommended. 7.5%ABV
